This vibrant chopped salad gets its crunchy name and texture from the cabbage, cauliflower and ribbons of carrots mixed with crisp apples on a bed of chopped romaine, all tossed in a deliciously sweet and tangy maple Dijon vinaigrette and topped with crunchy toasted pepitas. Served with or without all-natural, organic chicken breast, this salad is a delight!

Ingredients: all-natural, organic chicken breast (optional), olive oil, sea salt & pepper, red cabbage, romaine lettuce, apples, carrots, cauliflower, green onions
